CAKE, CAKE AND MORE CAKE – Below is my favorite Vanilla Cake Recipe – I have made several modifications and this is by far the best……

*This recipe yields 24 cupcakes or 3 nine inch round cakes

Ingredients –

2 3/4 C. Cake Flour

1 1/4 Tea. Baking Soda

1 1/4 Tea. Baking Powder

1 Tea. Salt

1 C. Butter (2 sticks – room temp.)

2 Tea. Vanilla (you can also use 1 tea. vanilla and 1 tea. almond extract)

1 3/4 C. Sugar

1 1/2 C. Buttermilk (room temp.)

4 Egg Whites (room temp.)

Preheat over to 350 F – prepare baking pans of your choice

Using a mixer with paddle cream butter and sugar together – add in egg whites – whip for about 30 sec. add in vanilla.

In a separate bowl sift together flour, baking soda, baking powder and salt – slowly add flour mixture into wet ingredients, alternating with the buttermilk until both are incorporated – bake for about 25 min or until toothpick comes out clean – let cool in pans for 10 min then remove from pans – cool completely before decorating.
